Ham and Cheese Quinoa Bites

Ingredients
2 cups cooked quinoa
3 eggs
1 cup zucchini, shredded
1 cup shredded cheddar cheese
1 cup diced ham
1 tablespoon dried parsley
3 tablespoons Parmesan cheese
1/2 small onion, diced {about 1/4 cup}
1/2 teaspoon salt
1/4 teaspoon pepper
Olive oil for the pans

Preheat oven to 350 degrees.

Place all the ingredients in a large bowl and mix to combine. Spray 2 mini muffin tins with olive oil and scoop 1 tablespoon into each cup. Bake qunioa bites for 18 minutes, or until the edges of the quinoa bites are a nice golden brown.
